This June, Norman Yates Distillery brought the flavour, the fun, and the future all in one crisp winter month.From rolling out our beloved Gilly’s Gin under the sunshine at Bambinos on the Farm, to ramping up construction on the next phase of the distillery and continuing to build up our team through The NYD Way, this month has been anything but slow.
Bambinos on the Farm: A Day of Citrus & Community
On June 8, we were proud to take part in the Bambinos on the Farm event hosted by our friends at Eastcoast Beverages. This wholesome family day was all about fresh flavours, local produce and connecting with the community and we were right there in the middle of it all, pouring up something special.
At the heart of our pop-up was Gilly’s Gin, our proudly Australian craft gin that’s as refreshing as it is refined. What made it even more special? One of Gilly’s key botanical ingredients, orange peel, is actually produced by Eastcoast themselves. So while families toured lemon and orange orchards and picked fruit by hand, we were pouring the essence of those very groves into every bottle.
Expansion in Motion: A Bar Is on the Way
As the cooler weather rolls in, things are heating up back at the distillery. Our expansion continues with the next big step, the bar build.
Yes, the structure is up. The walls are in. And now, we’re focused on shaping a bar that will one day serve our spirits just metres away from where they’re crafted. This will be a space where locals and visitors can experience NYD the way it was meant to be up close, personal and poured with purpose.
We’re not just building infrastructure, we’re building an experience.

Behind every pour and production milestone is a team that’s continually learning, evolving and growing together. That’s what The NYD Way is all about.
This month, our team has dived deeper into the operational side of the business exploring the supply chain, learning the ins and outs of sales, and understanding how every role connects across the distillery.
From batching to barcodes, we believe that when our people know the whole process, they can pour with confidence and pride.
Looking Ahead
As winter deepens, we’re not slowing down. We’re filling bottles, laying bricks, building knowledge and sharing our journey with the community that makes it all worthwhile.
